List all AIProviderConfig rows for an organization (optionally filtered to enabled=True)

List all AIProviderConfig rows for an organization.

Read-only — no DB mutations. Uses context.metadata["organization"] for the internal organization_id lookup; the public input is organization_uuid only.

When enabled_only=True, filters to rows where enabled=True. Results are ordered default-first (is_default DESC, id ASC).

Output shape:

• ai_provider_configs: list of dicts with keys ai_provider_config_uuid, connection_uuid, default_model, is_default, enabled
• count: len(ai_provider_configs)
